Dining Opportunities

CNM is pleased to offer a variety of dining opportunities to the public.  Both restaurants and the bakery are operated during a few weeks of each academic term by students in our Culinary Arts, Professional Cooking and Baking programs.  We will be serving you a variety of quality, wholesome, delicious cuisine and providing you with exemplary customer service.  We value and learn from your input.  Thank you for supporting the CNM Culinary Arts program.  We look forward to your joining us! Global Café

The Professional Cooking II student-oriented  Global Café serves meals to the public at various times throughout the term. Dates will be posted soon.

A menu has not been decided upon yet since the students are developing recipes as part of their class instruction.  Meals generally cost from as little as $5.00 to as much as $12.00; the average guest check is approximately $10.00.  We seat promptly at either 11:30 or 11:45 a.m., do not accept credit or debit cards, and ask that reservations be kept to 6 people or less.  Checks may be made out to CNM.

In place of "Tips" we do accept cash donations for quality service.  These donations are deposited into the CNM Foundation Culinary Arts account .  This account is used to pay for some, or all, of the fees required for our students to take the Certified Foodservice Manager (CFM) written test  to obtain professional certification as a CFM with the International Food Service Executives Association (IFSEA).

For people attending from off-campus, we reserve some parking spaces in the Volunteer Lot  on serving days (only 10 spaces), from 11:00 a.m. to 2:00 p.m.  These parking spaces are on a first-come, first-serve basis.

Should you be interested in making reservations for lunch, please email Chef Carmine Russo at crusso@cnm.edu.  Include your name, phone number, email address, the number of people in your party, the date and preferred seating time.  Your reservation is confirmed ONLY when you receive an email back stating it is confirmed; all requests will get a call-back even if we are sold out.  When we fill up, we place people on a first-come, first-serve "stand-by" list in case an existing reservation becomes available. 

If  you  make a reservation and cannot keep the date, please email Chef Russo as soon as possible so we can fill those spots with our "stand-by" guests.

Enjoy our dining opportunities prepared by Professional Cooking I students under the instruction of Chef Woodard and Chef Clapp with the assistance of Chef Peter Witter, IT.   The menu is sure to please and offers an array of entrées, homemade soups, fresh salads, baked breads, and fantastic desserts. 

There are two brunch buffets in Smith Brasher Hall:  Thursday, October 15th, from 10:00 am to 12:30 pm, and again on Thursday, October 15th, from 5:00 pm to 6:00 pm.  The cost is $6.00 person; no reservations are required.

On Thursday, October 22nd, Wednesday, October 28th and Thursday, October 29th:
- A la carte breakfast will be served from 9:30 am to 10:30 am and
- A la carte lunches will be served from 11:30 am to 12:30 pm and again from 5:00 pm to 6:30 pm.


The American Regional Cuisines Dining Room service is available on Thursday, November 5th, Thursday, November 12th, and Thursday, November 19th at both 11:30 am and 5:30 pm. Reservations are required - please call 224-3915.  Cost is $7.00 per person.

Cash only please.  No bills over $20.  Parking at CNM's Main campus can be difficult to find. The lot at the NW corner of Buena Vista and Coal is permit parking; however, few parking meters are available.  There is usually free parking available in the Smith Brasher Hall lot at the SW corner of Coal and University.  Please plan on a fifteen minute walk to the Bake Shop from this lot.
